乙烯是一種調節生長、發育和衰老的植物激素.所有的果實在發育期間都會產生微量乙烯,在果實未成熟時乙烯含量很低,在果實進入成熟時會出現乙烯高峰,與此同時果實內部的淀粉含量下降,可溶性糖含量上升,有色物質和水溶性果膠含量增加,果實硬度和葉綠素含量增中,果實*的色香味出現,采用相應的措施才能夠延續果實的后熟,延長果實的貯藏壽命.乙烯也可以催熟別的水果,把青蘋果和熟蘋果放一起青蘋果就很容易熟,就因為熟蘋果釋放出乙烯催熟青蘋果.
其便攜性已被果蔬采后科研工作者用于1-MCP、DCA、氣調保鮮等研究
